Cheers to the freakin’ weekend, drink to that!

It’s Friday and I have another yummy cocktail recipe for you to try. Actually this week I have a few courtesy of Appleton Estate Rum.

Ruby Rum Cocktail

This is my personal concoction, that screams Summertime. I dare you to find a Caribbean person that doesn’t love rum punch. This isn’t exactly rum punch but it is just as delicious.

  • 2oz Appleton Estate Rum (Signature will do just fine)
  • 1/3 oz lime
  • 2oz Pineapple Juice
  • 1/2oz Ribena Blackcurrant Syrup

Put ice, pineapple juice, Appleton into a shaker, squeeze the juice of 1/3 lime into the shaker, throw the lime into the shaker. Shake Shake Shake. Pour into any glass you like (it taste awesome regardless…just leave out the ice). Pour the Ribena Blackcurrent Syrup into the center of the glass. The syrup will settle at the bottom of the glass giving a beautiful ombre look. Garnish with fresh fruit!

Appleton Estate Rum Cocktails

You know already how much I love Appleton so when they sent me the recipes for some of their cocktails I, of course, wanted to share it with you! These cocktails use the Signature Blend, 8 Year Old Reserve and the 12 Year Old Rare. All are delicious but each vintage has a distinct flavor that perfectly compliments the cocktail being crafted.

Jamaican Mule – Signature Blend

1 oz Appleton Estate Signature Blend
3 lime wedges
2 oz Ginger Beer
1 dash Angostura Bitters
Squeeze limes into lowball glass & press them with a muddler.
Add ice cubes and build the remaining ingredients in the glass. Stir and serve.

Estate Daiquiri – 8YO Reserve

Let’s refine the daiquiri shall we?
1.5 oz Appleton Estate 8YO Reserve
1oz fresh lime juice (emphasis on the fresh)
1/2 oz simple syrup
Shake all ingredients in a shaker filled with ice. Shake until the shaker is “frosted”. Strain into a coupe glass (NO ice). Garnish with orange peel.

Estate Old Fashioned – 12YO Rare

Classic Old Fashioned, mastering this cocktail will ensure you impress your guests every time.
2.5oz Appleton Estate 12YO Reserve
1/2 oz simple syrup
1 dash Angostura Bitters
2 dashes orange bitters
Add all ingredients to a mixing jar filled with ice. Stir until chilled. Strain into an old fashioned glass (rocks glass) with a LARGE block of ice or ice sphere. Garnish with an orange twist.

Joy’s Cocktail – 8YO Reserve

How special is it to recreate Master Blender Joy Spence’s cocktail!
1oz Appleton 8YO Reserve
3 oz Ginger Ale
Slice of orange
5 dashes Angostura Bitters
Squeeze orange slice into Highball Glass. Muddle it. Add ice and build ingredients into glass. Stir and serve.

Mai Tai – 8YO Reserve

Mai Tai with the 8YO Reserve is so incredibly refreshing.
2oz Appleton Estate 8YO Reserve
1/2oz fresh lime juice
1/2oz Grand Marnier
1/2oz Orgeat syrup
Combine all ingredients in a shaker filled with ice. Shake well until chilled (shaker is frosted). Fill a rocks glass to the top with crushed ice. Strain cocktail into glass and garnish with a mint sprig.
